DERBY WEEK

This is a happy Monday only due to the fact that the Kentucky Oaks and Kentucky Derby are right around the corner. And that means I get to make Bourbon Balls! These little suckers have quite the bite to them so if you do not like bourbon you will not like these! Personally, I love them!






- 1 cup finely crushed vanilla wafers
- 1 cup grated pecans
- 1 cup powdered sugar
- 2 TBSP cocoa
- 1 1/2 TBSP white corn syrup
- 2 ounces Bourbon of choice
- 1 container Baker's dipping chocolate

Roll wafers fine and mix well withe sugar, cocoa and pecans. Dissolve syrup in bourbon and add to dry ingredients. Blend well and form into small balls. Dip into melted chocolate until completely covered and cool on wax paper. Store in a cool place in tin box until used. 

I usually make a double batch and will layer them (wax paper in between the layers) in a tupperware container stored in my refrigerator. YUM!

P.S. be sure do designate these as BOURBON balls and not just some chocolate ball. We had a very unhappy kid one year at our Derby Party.... haha! You can only imagine the look on his face when he bit into one of these bad boys!
